Thousand Flower Honey:

Calabria, Sila woods (May/June)

This honey is derived from a spontaneous and changing combination of plants and strongly mirrors the places in which it is produced, in this case the Mediterranean scrub. Terre di Miele Thousand Flower Honey has an intense golden colour, its scent has clear floral notes and the taste is sweet and lingering, like candied fruit and peach syrup.

Recipe: Spiced fruit compote with Thousand Flower Honey

3 apples
3 pears
the rind of half a lemon and half an orange
10 grains of black pepper
half a cinnamon stick
2 cloves
20 g fresh ginger
juice of 1 orange

Julienne cut the orange and lemon rind and boil for two minutes. Peel the fruit and dice it, put it in a pan with the orange juice, the fresh ginger peeled and chopped up small, and the Thousand Flower Honey. Cover and cook for a few minutes. The fruit must be cooked but still remain crunchy. Serve hot or cold.
