Lemon Honey:
Place of origin/Period: Sicily province of Catania (April-May)
Just like our Orange Blossom Honey, our Lemon Honey too magnificently represents the land in which it is produced: the immense lemon groves on the plain of Catania. The colour is very light, tending towards white and its taste is very intense, as is its scent, which reminds one of citrus flowers and fruit. It crystallizes in a creamy paste which is very pleasant on the palate.
Sizes available: 400g - 250 g
Properties: An excellent sedative and relaxant, it is rich in vitamins and is antiseptic. It is indicated for sweetening drinks such as tisanes and chamomile.
Recipe: Duck with honey and rosemary
1 duck
300 g sausage
100 g lemon honey
100 g parmesan cheese
1 egg
2 onions
2 stalks of celery
1 teaspoonful of flour
2 bunches of rosemary
4-5 salvia leaves
1/2 glass of white wine
oil, salt, pepper.
Clean the duck, sear it and remove the bones. To prepare the stuffing remove the casing from the sausages and mix the meat with the egg, parmesan, flour, salvia and 1 bunch of rosemary, well chopped. Fill the duck with this mixture and sew it up carefully. Brown the onion, diced celery, rosemary and the duck in a casserole with the oil, then add the wine, salt and pepper. Cook at a low heat for about an hour and a half. When cooked, place the duck on a serving dish and after passing the cooking sauce through the blender, pour it over the duck.
