During the flowering period, the honeycombs containing the honey are lifted out of the hives and taken to the warehouse where the honey is extracted in a stainless steel automatic line. The wax frames with the honey in the capped cells are placed in the uncapping machine to remove the cappings. They are automatically positioned in the baskets and once they are loaded, they are placed in the extractor where they are centrifuged to remove the honey. Once this process is finished the empty wax frames are tidied up and taken back to the hives. This work process guarantees the hygiene and healthiness of the product, while maintaining the home-made touch of our honey. The honey is placed in stainless steel settling tanks and left for 10-15 days to settle; it is then placed in 500-kg drums and stored in a refrigerator at a temperature of 14 degrees centigrade. The last phase is bottling, during which the honey is softened at a temperature of below 40 degrees centigrade, so that the sensory properties remain unchanged.
