Eucalyptus honey:

Place of origin/Period: Sicily, province of Caltanissetta (July)

An intensely scented tree typical of the centre-eastern Italian countryside, it has a medium amber colour. The scent is intense, with a hint of dried mushrooms. The taste is strong but pleasant, like caramelised sugar.

Sizes available: 400g - 250 g

Properties: It has an antibiotic, anti-asthmatic and anti-catarrhal action. This honey is used considerably to cure coughs.

Recipe: Prickly lettuce roulades with Eucalyptus honey

8 large prickly lettuce leaves
120 g stale bread
1 glass of milk
60 g raisins
30 g pine nuts
1 teaspoonful of powdered cinnamon

Plunge the prickly lettuce leaves into boiling water for a few seconds, then drain and dry them. Place the bread into the tepid milk; when it has softened, mix it with the raisins, pine nuts and cinnamon. Season with oil, salt and pepper. Spread out the prickly lettuce leaves, divide up the mixture and make the roulades. Season them and place in a hot oven at 180° for ten minutes. Drizzle over the honey and serve.
